Ghee

Ingredients:

¨ Butter ½ Kg. or 1 Kg. (at the end of the process, the amount of ghee left is relatively small)

Necessary tools:

¨ A strainer

¨ A stainless steel or cast iron pot (never aluminum)

¨ A glass container, preferably with an airtight lid. If not, a plastic Tupperware™ type of container will suffice

¨ A wooden spoon

Preparation:

¨ Melt the butter in the pot over low heat, continuously stirring the butter so that it does not burn.

¨ When the butter starts to boil, a foam will form on the surface of the melted butter. Do not remove the foam at any time, but rather let it evaporate away.

¨ Continue to boil the butter while stirring, until the butter has further liquefied and takes on a golden color. The proteins from the butter will begin to accumulate on the walls of the pot, and will take on a toasted color and will begin to smell like biscuits.

¨ Allow to cool uncovered, and as it cools it will start to solidify (during the summer it will be less solid and in the winter it will be solid like butter but the texture will always be granulated). It can be stored outside of the refrigerator up to one year, long if refrigerated.

Wheat Meat (Gluten)

Ingredients:

¨ 1 Kg. of wheat flour, without baking powder (serves approx. 4)

Preparation:

¨ Place the flour on a clean surface. Make a hole in the middle and add a little water to form a soft mass, but work the dough too much with the fingers, but kneed it until it has a texture similar to that of bread dough. Allow the dough into a pot full of water overnight.

¨ The next morning, put the dough in a strainer and slowly wash the dough under running tap water. Rinse until the water comes out transparent. The dough should be somewhat of an elastic mass.

¨ Put the washed dough in a generic bag and cook over a high flame with soy sauce, 3 cups water and a little pepper and oregano, for about 45 minutes.

¨ Then, remove from fire, strain and remove from the bag. The mass is now wheat meat, where you can prepare in different ways or add to your favorite stew.

¨ Leftovers may be refrigerated.

¨ Although this preparation calls for soy sauce, you may use tomato sauce and it adds a very good flavor.

Lemon Rice

Ingredients:

¨ 350 grams of brown rice.

¨ Twice as much water as rice.

¨ 1 tablespoon of ghee (or butter)

¨ A pinch of ground cumin and mustard seeds

¨ 2 lemons

¨ 2 tablespoons of butter

¨ Parsley and salt.

Preparation:

¨ Wash the rice and allow it to soak for twenty minutes.

¨ Heat up the ghee in a pot and sautee the spices in the ghee. Drain the rice, and add the well-drained rice to the spices and hot ghee. Stir fry the rice for 2 or 3 minutes, and then add twice as much water as there is rice, and add a couple pinches of salt.

¨ Cover the pot and allow the rice to cook on simmer for about 20 minutes, or until the rice has absorbed all of the water.

¨ Uncover the cooked rice and squeeze the lemons over the rice. Add the butter to the rice and briefly mix.

¨ Cover the rice and allow it to cook for an additional two minutes.

¨ Serve each portion of rice with a sprig of parsley and a small slice of lemon.

Sabji

Ingredients:

¨ 2 lbs. of potatoes

¨ 1 lb. of carrots

¨ 1 lb. of string beans (cut)

¨ 6 ears of corned, peeled and cut (may add just kernels of corn if preferred)

¨ 2 lbs. of tomatoes

¨ 2 whole peppers (green or red)

¨ Ginger (add to taste, it is very strong)

¨ Bay leaves, pepper, cumin, salt, curry

Preparation:

¨ Fry the potatoes in a separate pan after chopping them or slicing them into desired shapes.

¨ Chop the peppers into strips and fry them in the ghee with the spices and grated or chopped ginger.

¨ Chop the carrots into strips, and add them to the cooking mixture.

¨ Chop the tomatoes into strips as well, and add them to the cooking mixture.

¨ When all of this boils down a bit further, add the string beans and the corn, and cook for an additional 10 to 15 minutes.

¨ Check with a spoon or knife to make sure that the carrots are fully cooked. When the carrots are fully cooked, everything is fully cooked.

¨ Lower the heat down to a simmer and then add the potatoes which have already been fried. Cook for an additional 5 minuts.

¨ Serve hot.

Masala Chickpeas with Coconut milk

Ingredients:

¨ Dry chick peas

¨ Coconut milk

¨ Spices

¨ Tomatoes

¨ Ginger

¨ Pepper

Preparation:

¨ Soak the chickpeas the night before. Cook in boiling water until the chickpeas cooked thoroughly, which takes Approx. 1 hour (20 min. in a pressure cooker).

¨ Change the water in which the chickpeas were cooked with new hot water, simmered in cinnamon, while another pan makes a masala sauce with masala spices, pepper and giner in a liquid base. Add salt to taste.

¨ Add the chickpeas to the masala sauce and finally add the coconut milk. Cook for 5 minutes, serve hot.

Fried Gluten

Ingredients:

¨ Gluten

¨ Soy sauce

¨ Spices to taste

¨ Tomatoes

¨ Asefoteida (hing) or garlic

Preparation:

¨ Cut the gluten into slices, season to taste with soy sauce and spices. Brown both sides of the slices of gluten in oil. Separately pan fry the pepper paste (2 tablespoons) with seasonings and salt and tomato if you want to give it more liquidity. When finished, mix the gluten with the sauce.

Cucumber salad, with celery and lettuce


Chop all ingredients and mix with a special sauce. The special sauce consists of a liquefied mixture of the following vegetables: half a pepper, a tomato, a slice of ginger, lemon juice, olive oil, and salt.

Halava

Ingredients:

¨ 200 grams of ghee or butter

¨ 2 cups of semolina

¨ 3 cups of sugar

¨ 4 cups of milk

¨ 100 grams of peeled almonds

¨ 2 tablespoons of ground cinnamon

¨ A handful of raisins

Preparation:

¨ The traditional rule of thumb for Halava is to count measurements: 1 part butter or ghee, 2 parts farina, 3 parts sugar, and 4 parts milk. For the health conscious, you may reduce the sugar 3 parts to 2 and use some olive or vegetable oil instead of the butter or ghee.

¨ Heat the butter in a large pot over medium heat and when the butter almost begins to smoke, slowly and in increasing intervals, constantly stirring until they take on a brown, dark caramel-like color.

¨ Reduce the heat, add almonds, and continue stirring and frying until it reaches a color that you like, usually brown (unburned, of course).

¨ Meanwhile, prepare the syrup by dissolving the sugar in 2 cups of the milk. Boil the mixture for 3 to 4 minutes. Remove the farina from the heat and slowly add the syrup while stirring (be careful the mixture may sputter!).

¨ Bring back the pan to low heat and stir the mixture until uniform.

¨ When the mixture has absorbed almost all moisture, add the remaining sugar.

¨ Remove from heat and cover with a clean cloth for about 10 minutes. Then pour the mixture into a mold, and release it onto a plate when cool and sprinkle a little cinnamon on it.

Anise Tea

When the water is boiling add anise and a cinnamon stick. Let it settle and … ready J

Ghee

Ingredientes:


  • Mantequilla ½ Kg. o 1 Kg. (al final del proceso queda bastante reducida por ello cuanto más cantidad mejor).

Necesario

  • Un colador.
  • Una olla de acero inoxidable o de hierro colado (nunca de aluminio).
  • Un recipiente de vidrio preferentemente con tapa hermética. Si no es posible también puede utilizarse un recipiente de plástico tipo tupperware.
  • Una cuchara de madera.

Elaboración del ghee:

  • Se pone la mantequilla en la olla a fuego lento y se va removiendo para derretirla. Durante todo el proceso se deberá ir removiendo constantemente y evitar que la mantequilla se queme.
  • Cuando empiece a hervir se formará una espuma que NO se ha de retirar en ningún momento, sino que hay que esperar a que esta se evapore.
  • Se mantendrá hirviendo hasta que la mantequilla se haga más líquida y alcance un color dorado. En las paredes de la olla quedará la proteína a medida que se vaya haciendo el ghee y cogerá un color tostado y tendrá un olor a galleta .
  • Se deja enfriar sin tapar y a medida que se va enfriando cogerá consistencia y se solidificará (en verano quedará menos consistente y en invierno quedará completamente frío como la mantequilla aunque la textura siempre será granulada). Se conserva fuera de la nevera durante un año.


Carne vegetal (gluten)

Ingredientes:


  • 1 kg de harina de trigo, sin polvos de hornear (para aproximadamente 4 porciones)

Preparación:

Colocar la harina sobre una superficie limpia. Hacer un hoyo en el medio y agregar agua de a poco hasta formar una masa suave, pero que no se pegue mucho en los dedos, similar a la textura de la masa para pan.

Dejar la masa en una olla llena de agua de un día para otro.

En la mañana siguiente poner sobre un colador e ir lavando poco a poco la masa, bajo el chorro de agua de la llave. Lavar hasta que el agua salga transparente. Se obtendrá una masa elástica.
Poner la masa lavada en una bolsita de género y cocinar a fuego alto, con salsa de soja, 3 tazas de agua y un poco de pimienta y orégano, durante aproximadamente unos 45 minutos.
Luego, sacar del fuego, colar y sacar de la bolsita. La masa es ahora carne vegetal, la que podrás preparar de distintas maneras o agregar a tu guiso favorito.

Lo que no ocupes lo puedes refrigerar sin problemas.

Para las preparaciones se recomienda utilizar salsa de soja y o salsa de tomate para aportar mejor sabor.


Arroz al limón

Ingredientes:

  • 350 gr. de arroz integral.
  • 1 cucharada de ghee.
  • Una pizca de comino y una de mostaza.
  • 2 limones.
  • 2 cucharadas de mantequilla.
  • Perejil y sal.

Preparación:

  • Lavar el arroz y dejar en remojo 20 minutos.
  • Calentar el ghee y saltear las especias, agregar el arroz bien escurrido, removerlo dos o tres minutos y echar el agua (el doble de agua que arroz), la canela y la sal.
  • Tapar la cacerola y cocinar a partir del hervor a fuego lento durante unos veinte minutos o hasta que el arroz haya absorbido todo el líquido.
  • Rociar por encima con medio jugo de limón y la mantequilla.
  • Tapar. Cocinar dos minutos más.
  • Servir cada plato decorado con una ramita de perejil y una rodaja de limón.

SABJI


Ingredientes:·

  • 2 lbs de papa
  • 1 libra de zanahoria
  • 1 libra vainitas
  • 6 choclos desgranados
  • 2 lbs de tomate
  • 2 pimientos
  • Jengibre

Preparación:

Picar los pimientos en tiritas. Sofreír en ghee con las especias y el jengibre rayado o picado. Agregar la zanahoria picada en tiritas. Incorporar luego el tomate también cortado en finas tiras. Cuando se empieza a cocer todo esto, se incorporan las vainitas y el choclo desgranado, se deja cocer entre 10 y 15 minutos. Verificar con una cuchara o cuchillo que la zanahoria este cocida (eso significa que todo esta cocido) y bajar a fuego lento y se incorpora la papa la cual tiene que ser freídas anteriormente.

Garbanzo con leche de coco

Ingredientes:


  • Garbanzos
  • Leche de coco
  • Especias
  • Tomate
  • Jengibre
  • Pimiento

Preparación:


Remojar la noche anterior. Cocinar el garbanzo hasta que este cocido. Aprox. 1 hora ( 20 min. en olla a presión), cambiar el agua con la que fue cocida, por agua nueva caliente, a fuego lento con canela, mientras en otra sartén se hace una masala con especias, pimiento y jengibre licuado. Agregue sal a gusto. Se incorpora la masala al garbanzo y finalmente se agrega la leche de coco.

Gluten asado

Ingredientes:


  • Gluten
  • Salsa de Soya
  • Especias a gusto
  • Tomate
  • Ají panca·

Preparación:

Cortar el gluten en rodajas, condimentar al gusto con salsa de soya y especias. Dorar en aceite por ambos lados. Sofreír pasta de ají panca (2 cucharadas) con condimentos y sal y tomate si lo desea para darle más liquidez. Luego se mezcla el gluten con el entomatados.

Ensalada de pepinillos, apio y lechuga

Picar todos los ingredientes y mezclar con una salsa especial. Licuar medio pimiento, un tomate, un trozo de jengibre, el jugo de un limón, aceite de oliva y sal


Halava

Ingredientes:

  • 200 grs de mantequilla o ghee
  • 2 tazas de sémola
  • 3 tazas de azúcar
  • 4 tazas de leche
  • 100 gr. de almendras peladas
  • 2 cucharadas de canela molida
  • Uvas pasas

Preparación:

La tradicional regla de oro para el halava es contar (medidas): 1 (mantequilla o ghee), 2 (sémola), 3 (azúcar), 4 (leche). Actualmente, se suele reducir el azúcar de 3 a 2 medidas y se utiliza algún aceite vegetal o de oliva en vez de la mantequilla o de el ghee.
Echar la mantequilla en una cacerola grande a fuego mediano y cuando casi empieza a humear, añadirle de a pocos la sémola, moviendo continuamente hasta que se ponga de un color marrón clarito. Reducir el fuego, añadir las almendras, mezclar y seguir friendo hasta alcanzar el punto (color) que le agrade (sin quemar, por supuesto). Mientras tanto, preparar el almíbar disolviendo 2 tazas de azúcar en el leche. Hervir la mezcla por 3 a 4 minutos. Retirar la sémola del fuego y añadirle el jarabe moviendo. Llevar nuevamente la cacerola al fuego lento y mover hasta que la mezcla quede uniforme. Cuando se absorba casi toda la humedad, agregar el azúcar restante. Retirar del fuego y cubrir con un paño limpio por unos 10 minutos. Luego verter en un molde, desmoldar en un plato cuando se enfríen y espolvorear canela.


Néctar de anís

A la hervida se incorpora el anís y una ramita de canela. Dejar reposar. Y listo :)
